Ombretta is the creation of friends and business partners Niccolo Fagherazzi and Michael Schiavello. Niccolo and Michael met in Venice in 2005 over a Campari where the first conversations began in earnest already hatching ideas for bar or restaurant ventures. The common thread was the will to simulate an Italian experience, simply, honestly and faithfully. Several years later and thousands of kilometres away, an opportunity arose that brought them back together to continue the conversations and finally act on ideas to bring them to life. In one of the many conversations they distilled the projection of Ombretta in a few words: Fresh, Seasonal, Cucina Povera. These words go together naturally, therefore the objective was clear and they were immediately on the same page with the direction of the menu. The menu at Ombretta dictates the experience for diners and staff. When a chance meeting with chef Danilo Cerrettini occurred, it was clear that this was a match that could not have been planned more perfectly. Born, raised and trained in Rome, well travelled and experienced in many styles of cookery, Danilo's heart (and stomach) is heavily entrenched in fresh, seasonal cucina povera. Every recipe has a story, every story has a history and all this history is inextricably linked with tradition, culture and place.
